Gnocchetti Leggerotti
with pesto and shrimps

Ingredients
  • 400g gnocchetti leggerotti
  • 300g fresh shrimps
  • 80g basil leaves
  • 30g parmigiano cheese
  • 100ml extravirgin olive oil
  • salt
  • 1 clove of garlic

Preparing

Start by preparing a light pesto.

Place the basil in a marble mortar or in a mixer, the pine nuts and the grated Parmigiano and start to pound, or blend at low speed. Add the extra virgin olive oil, add salt and mix at a minimum speed until you get a smooth cream.

Brown the garlic in a pan with a little oil.

Add the prawns, then add salt.

Put a saucepan with salted water on the stove and, when it has reached the boiling point, toss the gnocchetti, then drain them when cooked.

Pour the pesto into the shrimp pan, mix everything and add the gnocchetti.

Place in a dish and serve.
